Lidia Cooks in the Tradition of the Buffalo Soldiers

Wallace cooks up a dinner much like what the Buffalo Soldiers ate back in the late 1800s. Mostly beans, rice, or corn bread, bacon, or salted pork that traveled well, and coffee. -

That's coffee. I get very excited when Wallace told me that we're gonna cook, and he said, "and we're gonna cook, as the Buffalo Soldiers cooked." That's a nice slab of salted pork. We made some cornbread, some dumplings, some baked beans. Just cooking it on the open fire. Oh, so this is like a regular cornmeal. I love that approach to cooking, but that was the reality of those soldiers. put a little brown, shaved sugar over the top of a can of mush Delicious. - Delicious. Dessert, yes. - Yes. Breakfast. -

And the food tastes better the farther in the field you got. -

Psychologically. Because there was less of it. Yeah, yeah, yeah. -

So, you think the coffee's done? -
Wallace
Well, we'll see what we'll see. -
