Queen of Puddings

This is a very berry Queen of coconut puddings. A couple days ago I baked a loaf of coconut bread and cut a few fatty slices of it off to let it get nice and stale to go into the custard layer. The middle layer is a homemade raspberry and blackberry jam topped with fluffy meringue.
What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
In all of my baking I have never made meringue! I was surprised how much it poofed up as it baked and how beautiful it turned out. Queen of Puddings is fun to make! Each of the layers are very different but taste so perfect together in a big spoonful.
How did you add a Wisconsin twist to your flavors or decoration?
My Wisconsin twist lies in the homemade jammy layer where I used berries that were grown locally.
