Flourless Chocolate Almond Torte – This six-layered chocolate almond torte is gluten/dairy-free. It’s the perfect dessert to make ahead and freeze until you want a show-stopping dessert for guests. It is also a nice dessert for Easter and Passover, for those who observe Kosher practices.

What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!

The biggest challenge in making this dessert was the amount of time it took me to finely chop about two pounds of semi-sweet chocolate chips by hand after trying to use the food processor attachment on my Kitchen Aid mixer. The food processor was not shaving the chips finely enough to go into the sponge mixture or the ganache. Using a box grater and a block of chocolate may save some time.

How did you add a Wisconsin twist to your flavors or decoration?

I did not add a Wisconsin twist this time. Without a lot of experience in baking flourless desserts, I strictly followed the recipe. The author of this recipe offered high praise for not being able to tell that the dessert is gluten/dairy-free. The fresh blackberries and strawberries added nice color and textural drama.
