Ultimate Raspberry & Lime (Disaster Torte)
What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
Too many variables this bake. We used gluten-free Namaste flour for the first time, and we substituted lime zest/juice for the vanilla that the recipe called for. Not sure if the flour was a poor choice or if acid in the lime juice cause the baking powder to burn out early, but the cake was a dense and gummy mess. Flavors were dead on, but Team Shlimder has some more experimentation ahead with this gluten-free substitute.
How did you add a Wisconsin twist to your flavors or decoration?
Raspberries (a feature at the farmer's market) were made into a homemade jam and used as decoration. Eggs, buttermilk and whipping cream were all from Wisconsin.
