Savory Pithivier and Fondant Fancies

Pithy Pies and Humble Fancies – The three Pithiviers are made with puff pastry. The sunflower is filled with apple, turkey bacon and radicchio. The mountain is filled with pork sausage, peppers, cauliflower and morel and leek Monterey jack cheese. The sun is filled with ricotta cheese, turkey bacon, roasted zucchini, grape tomatoes and broccoli. The Fondant Fancies are white cake filled with black raspberry jelly with natural flavorings in the fondant (mixtures of wild grape, turmeric for one, saffron for another and maple syrup for the third).
What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
We tried using whole heads of cauliflower and broccoli to give the Pithiviers height. We learned that perseverance is key in the process of making puff pastry. Working on fillings while chilling dough helps but it still took us ten hours!
How did you add a Wisconsin twist to your flavors or decoration?
Wisconsin ingredients used were: bacon and sausage, cheese and butter, eggs, black raspberry jelly, and maple syrup.
