Lemon Raspberry Drizzle Cake
Tell us about your proudest moment – or humble failure – in this week’s baking challenge.
I attempted to reduce raspberry lemonade to a syrup for the drizzle – it kinda worked. I needed to reduce it a bit more. Could have used more of the drizzle on the cake too. I used frozen raspberries in the cake batter and tossed them with a bit of flour and lemon zest but the majority of them still sank to the bottom of the cake. It was still good though!
Describe how you added a Wisconsin twist to your creation.
Raspberries always remind me of picking berries in northern Wisconsin. I used free range eggs from a local farm, and all Wisconsin dairy products in the recipe.
