Leaf-shaped Herb Fougasse

Give your botanical creation a clever name – and tell us about your recipe.

Wisconsin Wood Violet Leaf-shaped Herb Fougasse. I used Paul Hollywood’s Herby Fougasse recipe and I also consulted the French fougasse recipe from The Little French Bakery Cookbook from North Freedom, Wisconsin. The Little French Bakery’s recipe said that refrigerating the dough overnight would create more blistering and bubbles on the surface of the bread. So I tried that.

Any disasters? Did you take any risks? Proudest moment? Lessons learned the hard way? Tell us about it.

My greatest risk was that I had never made fougasse before. Everything was new. I followed the suggestions from both recipes and it was delicious.

How did you add a Wisconsin twist to your flavors or decoration?

We live in a woods and are surrounded by the Wisconsin state flower the Wood Violet. I decided to make my bread in the shape of a wood violet leaf. I found a wonderfully shaped leaf near the house and I snapped a photo. I used it as the inspiration for my fougasse’s shape.
