Baking Challenge

Victoria Sandwich

Give your creation a name based on the flavors and decoration – and tell us about your recipe.

On Wisconsin to Victory Sandwich because it is the first week of Badger football. I followed Mary Berry’s Victoria Sandwich recipe for the raspberry jam and icing and used a cake recipe from The King Arthur Baker’s Companion. I added vanilla to the icing recipe.

What was your favorite thing about The Great Wisconsin Baking challenge overall (whether you participated in one or all challenges)? What did you learn from this final challenge? What are you most proud of when it comes to your bake?

The Great Wisconsin Baking Challenge introduced me to recipes I never would have tried – like Fougasse and Bakewell tart. Even though I did not post my entry for week 1, I did make the Jaffa Cake and was pleased with its flavor and texture. The final challenge made me realize that decoration is important. My tasters were very impressed with how it looked and loved the taste.

Did you incorporate three local ingredients into your Final creation? Tell us about your Wisconsin twist!

I used Wisconsin butter, local eggs and raspberries from my garden. I wanted to make a cake fit for a Badger tailgate party. I used red dye to tint some of the icing to make a red and white design. I frosted the top of the cake so that my red sugar motion W would stand out.

How did you do?

Absolutely lovely.
