Tea Cakes

Give your biscuits a name and tell us about your recipe.

Overly Fiddly Teacakes with Black Currant Filling – I used Paul's recipe which has about 400 steps. But, I subbed black currant preserves for the golden syrup in the filling. Viola! My folks loved these. I thought the best part was the digestive biscuit. I'll keep that part of the recipe and bin the rest. And, as a side note: anyone wanna buy the silicone mold I bought for this nuts-o challenge? Such a deal I have for you…only used once.

Would you describe yourself as a rogue baker, or do you strictly adhere to the recipe?

See above for info on this question. Two weeks left, fan club groupies! Maybe I'll tackle the choux challenge next week? What do you think? And I'm anxiously awaiting the unveiling of the crazy thing/s I'll have to make for the final WI Week.

Tell us about how you added a Wisconsin twist to your creation.

I added black currant preserves (made with currants I picked in Bayfield, WI) to the filling. And I used our chicken's eggs. Our chicken recently passed away, so I'm carefully hanging on to the last of her eggs for my final challenges. Poor Old Red. . . she lived a long life.

How did you do?

Pleasantly satisfied.
