Layered Meringue Dessert

Raspberry/Chocolate W Peaches and Cream – The raspberry meringue has freeze-dried raspberry powder, dark chocolate, fresh raspberries, and vanilla cream. The peach has freeze dried peach powder, peach custard, peaches and vanilla cream.

What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!

There weren't any big surprises during this challenge. I've worked with meringue in the past quite a bit, and the meringues responded how I expected. They had a crunch to the outside, and the inside was soft. I didn't incorporate the peach powder quite as well, so the peach meringue did crack slightly and didn't have as firm an outside. I was going to layer the four Ws all in one, but in the end decided it would feed more people and be more manageable if there were only two Ws in each.

I won't be eating the raspberry/chocolate meringues myself. They will be donated to the staff at the EAA. With the air show one week away, I know a special dessert can be a nice surprise in the middle of the chaos.

How did you add a Wisconsin twist to your flavors or decoration?

I made the Wisconsin Badgers' W. The raspberries were from Nature's Finest in Oshkosh. The dairy was Wisconsin. The eggs were from the Oshkosh farmer's market.
