Designer Fruit Tart

Give your tarts a name based on the flavors and decoration – and tell us about your recipe.

Lemon and Strawberry – It’s a lemon short crust with lemon curd. One is topped with strawberries and lemon sugar cookies with lemon icing and raspberry icing. The other is topped with strawberries and raspberries, glazed with strawberry jelly.

Now that you survived this challenge, what words of wisdom do you have to share?

Glaze the fruit right before serving (not the night before). Once sugar cookies get wet, they don’t recover. Use less extract than you think you’ll want. Par bake with beans/beads to help crust keep it’s shape.

Tell us about how you added a Wisconsin twist.

The raspberries and strawberries were from Natures Finest Foods in Oshkosh. The dairy was from Wisconsin. The eggs were farmer’s market eggs. The stars and hearts were to add a bit more of a 4th of July theme. Happy 4th of July everyone!
