Mirror Glaze Cake

Woodland Trillium Mirror Glaze Cake; This is the first Mirror Glaze Cake I have ever made. Actually, I had never seen, nor heard about them prior to watching the Great British Baking Show. I wanted to try my hand at one of these cakes, so searched the internet for a recipe that I could incorporate fresh strawberries. My family and I started this past weekend with a trip to our favorite berry patch, Arnold’s Strawberries outside of Rudolph, Wisconsin. This cake has a strawberry jelly layer sandwiched between two layers of White Chocolate Mousse, all atop a chocolate sponge cake base.

Tell us about your proudest moment – or humble failure – in this week’s baking challenge.

I was delighted to see that the glaze on the cake, once set, truly has a mirror-like finish!

Describe how you added a Wisconsin twist to your creation.

I wait all winter for the chance to walk through the local woodlands and love to search out wild flowers. I always feel like a hidden treasure is discovered when I come across a patch of trillium plants in bloom. As Spring came late this year, the trillium have just finished blooming and their beauty is still fresh on my mind. This was my inspiration for adding the trillium chocolate work to the top of the cake.
