Designer Fruit Tart
Give your tarts a name based on the flavors and decoration – and tell us about your recipe.
Terrace Tart, because the design was inspired by the iconic orange, yellow and green sunburst chairs at the UW-Madison Memorial Union Terrace. The tart features an almond shortbread crust and lemon curd-mascarpone filling.
Now that you survived this challenge, what words of wisdom do you have to share?
Fruit may not be the best medium for realistic art. My original plan for the center more closely resembled the terrace chair design, but after some practice fruit slicing I realized that I wasn’t going to be able to achieve realism. I’m quite pleased with the end result anyway.
Tell us about how you added a Wisconsin twist.
I used Wisconsin dairy products and eggs to make the crust and filling, and the fruit design is inspired by the Memorial Union Terrace chairs. I’d hoped to use some fruit from my garden, but it’s the end of the strawberry season and beginning of the raspberry season, so pickings were slim. I did find a ripe raspberry for the center.
