Rhubarb Cardamom Upside Down Cake – I adapted a recipe for persimmon upside down cake that I found online.

Tell us about your proudest moment – or humble failure – in this week’s baking challenge.

I’m thrilled that the star design turned as I had planned. I spent a lot of time looking at pictures of rhubarb upside down cakes online before designing my own rhubarb arrangement that took advantage of the varying colors of the rhubarb stalks.

Describe how you added a Wisconsin twist to your creation.

I grew the rhubarb in my garden. The addition of cardamom and star motif are a nod to the Scandinavian heritage shared by many in Wisconsin.
