Cranberry Orange Bagels & Bacon Cheddar Bagels

Would you describe yourself as a rogue baker, or do you strictly adhere to the recipe?

I like to start with a solid, established recipe and build from there with twists & improvisation.

Tell us about how you added a Wisconsin twist to your bread creation.

The Cranberry Orange Bagels contain dried Wisconsin cranberries. The Bacon Cheddar Bagels were inspired by Culver’s – a Wisconsin institution. I used Nueske’s Applewood Smoked Bacon from Wittenberg & Bletsoe’s Sharp Cheddar Cheese from Marathon.

How did you do?

It’s not pretty, but it’s edible.
