Brie & Cranberry Pithivier: featuring an organic whole wheat faux puff pastry, a wheel of Brie cheese and a cranberry apple chutney.

What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!

I’ve made an epiphany cake before — which is very similar to a Pithivier — so I really thought I had this one in the bag. But the cheese kept the faux puff pastry on the flexible side and, when I tried to transfer it from the baking sheet to the serving plate, my beautiful Pithivier fell apart. My sisters, parents and I still ate the heck out of it, though I feel like I could have had more of the chutney inside.

How did you add a Wisconsin twist to your flavors or decoration?

I used whole wheat organic pastry flour grown and milled right here in Wisconsin. The wheel of Brie is my ode to our state love of cheese, and the cranberries and apple in the chutney are all from Wisco.

How did you do?

It’s not pretty, but it’s edible.
