Upside Down Cake

Give your cake a name based on the ingredients and decoration – and tell us about the origin of your recipe.

Wisconsin Apple Upside Down Cake (grain free). I thought I’d go simple for this one. I thought about what to do for Wisconsin and of course, first thought was something with cheese. That led me to cheese being on an apple pies why not an upside down cake? I also do not eat gluten due to an allergy and general bake with grain free flours so I scoured the web for inspiration. I looked at a couple apple Upside cake recipes and then went from there. The pitfall is that the cake was a bit dry for an upside down cake due to not having juice run off like pineapple. Next time I’d add some chopped apples or apple sauce to the batter itself to get some more moisture in there. It was still a great even, not dry bake. I just think upside cakes should be extra moist. :-)"

Tell us about your proudest moment – or humble failure – in this week’s baking challenge.

I wasn’t thinking about pan size and totally pulled and put fruit/honey in too big of a pan so I ended up having to make a 2nd batch of batter.

Describe how you added a Wisconsin twist to your creation.

Simple… Wisconsin cheddar and apples are the featured ingredients.
