Flatbread. To tell the truth, I attempted all three. The 8-Strand Plaited Loaf went into the oven looking great but it came out looking like a flatbread. It had a great flavor, though. Then I attempted a sweet Bagel: cranberry orange. Fail. So, Flatbread

Give your bread a name and tell us about your recipe.

My flatbread is Paul’s Herby Fougasse from a technical challenge from the Great Brutish Baking Show.

Would you describe yourself as a rogue baker, or do you strictly adhere to the recipe?

I usually follow the recipe but not always to the letter, and may substitute ingredients. Timing may vary, so I usually make notes of any changes I made in time or ingredients.

Tell us about how you added a Wisconsin twist to your bread creation.

I was happy to see the recipe called for fresh herbs that I’m growing in my garden. So, my Wisconsin twist is my home grown herbs. I also used yeast from Milwaukee. My fails had Wisconsin cheese, herbs (8-plaited loaf) and cranberries (bagels).
