Delightful Lemon-Blueberry Sponge Cake with a Lemon-Blueberry Drizzle. I modified an orange sponge cake with drizzle from a Better Homes and Garden Cookbook published about 1970. For the orange juice, I used real lemon juice and added blueberries.
Tell us about your proudest moment – or humble failure – in this week’s baking challenge.
First attempt, I followed the recipe exactly and baked the cake in a tube pan (angel food cake pan). I took cake from the oven and turned the pan upside down like I do for an angel food cake. The cake fell out of the pan and I had it all over the counter. It tasted delicious. On the second attempt (I don’t give up), I used two bread pans lined with parchment paper. It was the first time that I used parchment paper. The cake came out of the pans beautifully except the blueberries sank to the bottom even when they were coated with flour.
Describe how you added a Wisconsin twist to your creation.
I used blueberries grown in Wisconsin and eggs from Thorp, Wisconsin.
