Maple Cream Crunch Roll

What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!

Each year in November, I make a delicious pumpkin roll utilizing the leftover baking pumpkins from our Halloween decorating, so as soon as I saw this challenge I started to think fall and get nostalgic for football, hoodies and leaves crunching under my feet. And while I’m not quite ready for summer to be over, I couldn’t help but turn some other favorite fall flavors for this dessert! The cake portion is a spiced cake recipe of my own that uses cloves, cinnamon, nutmeg and ginger. For the filling I used oodles of pure maple syrup in a traditional cream cheese filling for a beautifully woody and sweet flavor! For the topping I made an attempt at making maple candy … not a complete failure as the crunchies are absolutely delicious and the perfect topping for this Family Sized Roulade! The result is amazing! I only wish for more of a swirl as I know it would not be enough for Paul and Mary, but lucky for me, my children think the swirl is perfect and that the cake is very yummy! And isn’t that what baking is all about?

How did you add a Wisconsin twist to your flavors or decoration?

In this challenge I decided to give a nod to the Wisconsin state tree, the sugar maple, by utilizing a home produced maple syrup from Wagner Sugar Hill in Peshtigo, Wisconsin.
