Krazy Kringle – Two Ways. I was interested to learn the history of Kringles through my recipe searches. Did you know that Wisconsin is one of only two states to have a State Pastry?! Of course I decided to go rogue yet again and prepare half of my dough as a Strawberry Filled Kringle and the other half as Mini Cheese Danishes with a Strawberry Topping!

Tell us about your pastry dough and final texture after baking. Are you happy with it?

In the interest of full disclosure: I’ve NEVER made pastry from scratch before! Yikes! So I found a recipe courtesy of O and H Bakery that requires THREE DAYS of pastry and butter rolling! Ummm, yes please! Over the course of the three days the pastry and I really got to be old friends! We’d spend 20-30 minutes together each evening patiently chilling and rolling chilling and rolling. The final texture is flaky and delicious. It didn’t quite "puff" up the way I was hoping, but it possesses all the qualities I look for in a pastry otherwise!

Detail how you added a Wisconsin twist to your flavors or presentation.

The Wisconsin State Pastry is Kringle – so I made one! Utilizing fresh local ingredients, including the last of this years strawberries from our garden!
