Cranberry Lemon Drizzle Cake. I searched Lemon Drizzle Cake recipes and quickly found Mary Berry’s recipe. I read through hers and thought about what tweaks I would need to make in order to give this cake a Wisconsin twist. I came up with a variation of Mary Berry’s cake that is probably much more Americanized, with the addition of cranberries.
Tell us about your proudest moment – or humble failure – in this week’s baking challenge.
My humble failure came this week on attempt number one … As I was adding in the "whole" cranberries I thought back to an episode of the Great British Baking Show, in which a contestant added whole cherries instead of halving them, however, I continued adding whole cranberries to my cake. Naturally they all sunk to the bottom of the cake in a little clump. Disaster! That did not happen again! Try two has evenly distributed, halved, cranberries and is absolutely delicious!
Describe how you added a Wisconsin twist to your creation.
Cranberries of course! The Wisconsin State Fruit! The result was amazing! I am so pleased with the citrus flavor paired with the cranberries and the sweetness of the cake! It is a perfect cake for this hot spring weather we’ve been having, to be enjoyed for dessert on a deck or patio!
