Strawberry Layered Meringue Cake – The meringue layers have crushed pecans in them. The layers are a combination of mascarpone cheese and whipped cream.
What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
It was my first time making meringue, and I was surprised by how delicate the meringue was. I drew circles on parchment paper and secured it on the pan with masking tape in order to get equally sized meringue layers. I learned that meringue is tricky to work with.
How did you add a Wisconsin twist to your flavors or decoration?
I used Bel Gioioso mascarpone cheese and Organic Valley whipping cream (both are Wisconsin companies).
