Mirror Glaze Cake

Rhubarb Mousse Cake (a Vanilla Genosie filled with Strawberry Jam and covered in a Rhubarb Mousse) – Origin: We’ve recently had a warm week here in Madison and I wanted something that was light and could be served cool. I thought a mousse cake would cover both options. The recipes for the genoise is from ‘The Cake Bible’ with a minor tweak and the mousse was derived from something I saw on the internet with a couple of modifications. The glaze colors are meant to reflect stalks of rhubarb – but I’m not too sure that really came through.
Tell us about your proudest moment – or humble failure – in this week’s baking challenge.
Proudest moment: actually getting the cake onto the platter without smudging the glaze!
Describe how you added a Wisconsin twist to your creation.
Incorporating seasonal ingredients was a goal of mine. Rhubarb and strawberries are being sold at the Dane County Farmer’s Market the last two weekends, so I thought I would go with the classic flavor combo of strawberries and rhubarb.
