Layered Meringue Dessert

Pink Lemonade Meringue. I shaped the meringue into a 6″ circle. I filled it with raspberry buttercream and lemon curd; I'd mixed in some raspberries into the buttercream to give it a nice color and flavor. I decorated the top with fresh raspberries and candied lemon. I also glazed the meringue with white chocolate to be sure that the curd didn’t seep into the meringue.
What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
I read somewhere that on a hot, humid day, you can put some cornstarch in the meringue to give it a good texture. The result? A perfect, delicious meringue.
How did you add a Wisconsin twist to your flavors or decoration?
I have a lot of homegrown raspberries near my house and thought raspberries would be nice. I also used Organic Valley dairy products.
