GO BIG RED (Wine Velvet Cake), Lavender Honey Macarons, and Olive Oil Lemon Bars
The GO BIG RED (Wine Velvet Cake) is a red velvet cake made with red wine and cocoa powder to give it a subtle redness instead of using food coloring. Each little cake is filled and topped with cream cheese frosting and white chocolate. The Lavender Honey Macarons are a light and airy macaron shell filled with honey buttercream. Finally, the Olive Oil Lemon Bars have a shortbread base with lemon zest and an olive oil lemon custard. Big beautiful Maldon sea salt flakes finish them off.

Tell us about your creation's final texture after baking. Are you happy with it?

Well… I made these over three days while also working 12 hours each day. So out of exhaustion, there was little bit of human error. Having made macarons before successfully, I was disappointed to have not paid enough attention to my meringue while beating it, so all of my macarons cracked, and I didn't have time to redo them.

Detail how you added a Wisconsin twist to your flavors or presentation.

Besides naming my red food after the University of Wisconsin, I brought them to the last day of filming for a short film, and everyone loved them. They were an excellent way to celebrate. Having a good time is a pretty Wisconsin thing to me.
