Designer Fruit Tart

Blueberry Lime Bike Tour Tart – I used a basic sweet shortcrust pastry filled with a lime crème pâtissière with a lime curd. It was topped with blueberries and candied lime and apple bicycles.

Now that you survived this challenge, what words of wisdom do you have to share?

Keep your butter cold and your mind sharp. I don’t have air conditioning, so my tart shell struggled to stay cold. I had an amateur moment and had to Frankenstein my crust together in the pie tin because it was falling apart. The butter had melted into the dough and was making it stick to everything.

Tell us about how you added a Wisconsin twist.

Bikes! I made this the day before my first bike tour from NYC to Harriman State Park. I’ve always been a cyclist. I biked around Madison when I was a student, and now an avid bike commuter in New York. Wisconsin’s love of biking and also housing the headquarters for Trek, one of the biggest bike manufactures, makes biking an obvious theme for my tart. I shared my tart with my fellow bike tourers the night before our ride. Though most of us were riding Minnesotan bikes…
