Cranberry Pineapple Upside Down Cake
Tell us about your proudest moment – or humble failure – in this week’s baking challenge.
My humble failure was not using enough cranberries. I was not prepared for the cranberries to sink down the sides of the pan and no longer be visible on top. They were supposed to radiate through the sweet gooey pineapple, but some actually rose as the cake baked to what would be the bottom of the cake. I expect fruit to sink if anything, but they did the opposite and disappeared from the top of my cake.
Describe how you added a Wisconsin twist to your creation.
I used cranberries! Living in New York City, people often only associate Wisconsin with cheese. When they ask what else Wisconsin is known for, my reply is always "Cranberries! We’re the number one producer in the US!"
