Totally Naked Jalapeño & Cheddar bagels. These are beer bagels with jalapeño and cheddar baked in. Something went wrong with the dough and they ended up being pretty flat. This was my first time making bagels and I wasn’t sure what the dough consistency was supposed to be like, given the ensuing battle with the dough I suspect I didn’t use enough flour. They may not be much too look at, but they taste amazing.
Would you describe yourself as a rogue baker, or do you strictly adhere to the recipe?
Normally I’m rouge, no one tells me what to do. But I am not good at making yeast based items so this time I strictly adhered, to the point of not adding additional flour when it seemed obviously necessary…
Tell us about how you added a Wisconsin twist to your bread creation.
I used my favorite New Glarus beer, Totally Naked, for the beer base. I was going to boil them in the beer as well, but I couldn’t bring myself to waste that much delicious beer.
How did you do?
It’s not pretty, but it’s edible.
