Asiago Bagels and Door County Cherry and Whole Wheat
Would you describe yourself as a rogue baker, or do you strictly adhere to the recipe?
Strictly adhere for the first run, and then I make subtle changes.
Tell us about how you added a Wisconsin twist to your bread creation.
The Asiago cheese from Pine River Dairy was inside and on top of the savory bagel, I also used a browning agent from Manitowoc’s Red Arrow Products on half of the Asiago bagels and it’s obvious which ones I used that on! Better color and flavor by far! The Montmorency tart cherries are totally Door County. These bagels are awful! Soggy bottoms, the asiago bagels were beautiful after proofing, and when I peeled them off of the tray to boil they sunk. I’ve never made them before, and I am perfectly happy leaving these to the professionals!
