Layered Meringue Dessert

Mandarin Meringue Mess – four layers of meringue with thick chocolate custard, desiccated coconut, and honey-poached homegrown mandarin orange segments between each layer (and a raspberry on top just for fun).

What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!

My meringues were too brown on the outside and too soft on the inside because I assumed the recipe I was using that said "200 degrees" meant Celsius (since I am Australian) but it should have been Fahrenheit! Always cross-reference with multiple other recipes to make sure BEFORE you put them in the oven.

How did you add a Wisconsin twist to your flavors or decoration?

I remember having custard when I visited Wisconsin, so I used a chocolate custard as the primary filling – but I added mandarin oranges, because I needed to use up some of the many from my tree.

How did you do?

It’s not pretty, but it’s edible.
