How did this baker brighten our summer?

Joni exceeded expectations in every category, often interpreting the Wisconsin Twist by representing Wisconsin’s micro-geographies and subcultures. Her “Whitetail Welly” honors the state’s hunting tradition, her Michigan Shores Torte Cake is inspired by by her bike ride along the Maritime Trail, her “Ships Ahoy!” Designer Fruit Tart recreates the helm of the SS Badger that docks in Manitowoc.

An Eight-Strand Plaited Loaf is a feat on its own, but reworking the recipe to represent Green Bay Packer pride is a game day winning touchdown. Joni’s “Packer Backer” in Week 2 modifies a Hawaiian bread recipe — one with a softer crust to bring out the rich green and gold — to create a sweetened pineapple-flavor bread great for French Toast.

If you want a course called “Pushing the Envelope 101,” Joni should be your professor. We loved Joni’s epiphany in Week 6: “I get it now! I understand "puddings" – such a soft, moist texture; I love them! I made the Spotted Dick the traditional way [and am so] impressed with the depth of flavor and the silky smooth custard sauce.”
