What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
I completely freestyled this one. I just drew a picture of what I wanted and then made the layers separately. I didn’t have any clear dishes to set it in so I made them on a bar pan. I made white chocolate mousse and a layer of cheesecake on top of the sponge. I learned that using a form or parchment collar is necessary for presentation. I also learned I can make up my own recipes and they will taste just great!
How did you add a Wisconsin twist to your flavors or decoration?
I used in season fruits and eggs from my chickens but I struggled otherwise because I was so consumed on making it work. Next time I’ll try something like s’mores, which are perfect in mini form.

It’s not pretty, but it’s edible.
