Upside Down Cake

Maple-apple-cherry upside-down cake: While searching online for recipe ideas, I was instantly smitten with the idea of using maple syrup as an ingredient in an upside-down cake.
Tell us about your proudest moment – or humble failure – in this week’s baking challenge.
Assembling the ingredients and the cake went smoothly, however, when I peeked in the oven window I gasped at the site of the cake puffed up almost to the point of dripping over! (Next time I’ll use a 10" pan.)
Describe how you added a Wisconsin twist to your creation.
The maple syrup in this recipe is from a central Wisconsin farm, purchased from a neighbor whose family owns the farm. I also modified the recipe to include a few sweetened dried Door county cherries, which adds some color and tang. (I tried my best to obtain Wisconsin apples but alas had to settle for apples from another W-state – Washington.) I’ll be sure to try this recipe again in the fall and use Wisconsin apples!
