The cheesecake is raw cashews processed until they were creamy along with maple syrup, lime juice, and coconut oil – a small layer of this is added on top of the crust – then fresh blueberries are mixed in the remaining cashew mix, becoming the final layer of goodness. Sprinkle with lime zest and decorate with fresh whole blueberries.
