Gateau St. Honore with Cranberry Maple Caramel. I found the recipe online; it used salted caramel. I substituted maple cranberry syrup instead of sugar. It is described as a decadent French pastry made with puff pastry, cream puffs, pastry cream and salted caramel.
Tell us about your creation's final texture after baking. Are you happy with it?
The tiny cream puffs are a bit overbaked. But if you load them up with the pastry cream and whipped cream, they are fine. I am happy with it and know how to improve for next time.
Detail how you added a Wisconsin twist to your flavors or presentation.
I used Penzeys spices, Weyauwega butter, Wisconsin whipping cream and Kickapoo Gold Maple Cranberry syrup.
