The choux pastry, creme patissiere, creme chantilly, and salted caramel all tasted delicious. Unfortunately, the caramel crystallized a bit, so it didn't have the shine I was hoping for.

All of the dairy and eggs used in this creation were Wisconsin made. Thank you, Sassy Cow Creamery! Also, the choux puffs decorated the gateau with a Wisconsin "W".
