Classic French Tarte Tatin

Thyme for Tomatoes Tarte – Caramelized sugar laced with pear balsamic lends a sweet note to this savory tarte. Cherry tomatoes backed by caramelized onion and a bit of fresh thyme are finished with rough puff pastry to complete this dish.

Now that you survived this challenge, what words of wisdom do you have to share?

Be careful of caramel – it gets really hot! (I had a little splatter as I placed tomatoes and got a small (but super painful) burn on my finger. And I knew better! I used a different recipe for the pastry and am not as happy with it as the one I used about 2 years ago, when I tried to recreate a restaurant meal my husband and I had.
