Babcock Churros: red velvet churros with a cream cheese filling, served with Blue Moon dipping cream flavored like the Midwest ice cream

Now that you’ve survived The Great British Baking Show’s first-ever batter challenge, what words of wisdom can you share?

Deep frying is a fickle, fickle thing. Make sure your dough is sturdy and your oil is fresh and hot. Otherwise, explosions, burning, raw dough, disaster, etc. Had to do a couple batches to be happy with these.

Tell us about how you added a Wisconsin twist.

The churros are red and white, the Bucky Badger colors for the University of Madison, and served with a Blue Moon dipping cream based on the ice cream flavor served at Babcock Hall and native to the Midwest.
