Give your bread a name and tell us about your recipe.

Curd Monsieur Loaf; a white bread loaf stuffed with ham and white cheddar cheese curds.

Would you describe yourself as a rogue baker, or do you strictly adhere to the recipe?

I’m pretty rogue. I tend to have an idea of what I want and hodge podge together elements of different recipes to put together the final creation. This recipe used the bread dough for a pesto-stuffed bread, but the ham and cheese curds were my own twist based on the French croque monsieur, using a plaiting pattern from a sourdough brioche recipe.

Tell us about how you added a Wisconsin twist to your bread creation.

Each strand of the bread is stuffed with real Wisconsin white cheddar cheese curds, the most quintessentially Wisconsin food.
