Caramelized onions, mushrooms and spinach layered around seared beef tenderloin, encased in golden puff pastry…delicious! My proudest moment: discovering that the crust was delightfully crisp all around – no sogginess.

Describe how you added a Wisconsin twist to your creation.

My Wisconsin twist: including fresh mushrooms, onions and spinach from our farmers' market. And a golden crust decorated with a "W" (for Wisconsin…or for Wellington?).
