Upside Down Cake

Give your cake a name based on the ingredients and decoration – and tell us about the origin of your recipe.

Rhubarb Peach Upside Down Cake – based on recipe from Smitten Kitchen. I made a cake to reflect how recent political events have me feeling. This cake invokes lots of memories as it is one of the first cakes I learned to bake.

Tell us about your proudest moment – or humble failure – in this week’s baking challenge.

Flipping the skillet onto the plate while holding my breath! It slid right out.

Describe how you added a Wisconsin twist to your creation.

Instead of sugar in the cake, I used Skyview Farm Maple Syrup that came from our own maple grove, the eggs came from our chickens and the rhubarb from our patch. I wanted to use local strawberries but due to the torrential rains berries are few and far between so I subbed frozen peaches which were not as tasty as I hoped.
