Almond Lemon Summer Cake – I used almond flour for this cake and gave it a lemon curd filling and whipped cream topping.
What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
I had never attempted a gluten-free cake before. This was a pretty good first attempt! I didn't realize how much the cakes would deflate as they cooled. Maybe a different recipe would hold its shape better? I made the lemon curd from scratch as well, and it's so summery and delicious!
How did you add a Wisconsin twist to your flavors or decoration?
I used all local eggs and dairy. The whipped cream frosting was made with Sassy Cow Creamery heavy whipping cream… so yummy! Lemon desserts always make me think of summer in Wisconsin, and the few months we have where we can eat outside on the deck and enjoy summer.
