Baking Challenge

French Tarte Tatin

Give your tarts a name based on the flavors and decoration – and tell us about your recipe.

Not Your Grandmother’s Rhubarb Pie – Rhubarb pie is a family favorite and there is always an argument about what, if anything, beats Grandma’s rhubarb pie recipe with custard and rhubarb baked together. This is a browned butter crust with cream cheese, browned butter is another flavor enhancer, with almond and egg custard and rhubarb and orange fruit topping.

Now that you survived this challenge, what words of wisdom do you have to share?

We wanted to use Wisconsin seasonal fresh fruit that baked well… so rhubarb it is. Any recipe can be "twisted" a little.

Tell us about how you added a Wisconsin twist.

Used a creamy cheese and Wisconsin butter in the pastry and rhubarb from our uncle’s backyard and organic eggs from Blanchardville and made the French tarte with our German heritage love for rhubarb pie like Grandma always made. And Grandmas are all from Wisconsin and they can’t be wrong.

How did you do?

Pleasantly satisfied.
