4 Tier Pile of Sugar – AKA Strawberry Rhubarb Meringue Crown
Each of the four meringue discs are separated by strawberry rhubarb compote, fresh strawberries, and whipped cream. The top is decorated with three strawberries, rhubarb "bows", and a meringue kiss. This was a fun dessert to make (and eat!). The excess compote and cream will taste great with an old-fashioned shortcake biscuit and fresh strawberries.
What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
Biggest surprise: the dessert made it to the picnic even though my husband took the route with the speed bumps. What I learned along the way: don’t use a bread knife to cut a four tier meringue crown (but it still tasted great!)
How did you add a Wisconsin twist to your flavors or decoration?
I used local ingredients – eggs & rhubarb.
