Baking Challenge

Queen of Puddings

Give your dessert a clever name – and tell us about your recipe.

This week, my mother decided on the Queen of Puddings.

What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!

We changed the pudding by adding dehydrated pears instead of the raisins; for the fruit spread on the pudding, we used dehydrated cherry fruit leather. Per my mother's instructions cinnamon was added to the meringue. The pudding turned out really tasty. I rehydrated the pears slightly and cut them into bits. By not fully rehydrating them, they retained more of the pear flavor. The pears, cherries and the cinnamon in the meringue all paired (excuse the pun) nicely.

How did you add a Wisconsin twist to your flavors or decoration?

The cherries were from our backyard and the pears were from a brother's orchard, and again we used lots of butter, milk and other Wisconsin products. We had fun with this challenge.

How did you do?

Pleasantly satisfied.
