2 Chelsea Buns & Lardy Cake – I couldn't resist doing both. It was so nice working with the bread flour and learning how to make a substitute for brown sugar. I usually have a big supply of brown sugar but by using molasses and regular sugar I was able to complete my assignment without having to go back to the store again. I used three varieties for the dried fruit: blueberries, Door County cherries and cranberries. . . all well known for being produced in Wisconsin!
Now that you’ve survived this challenge, what words of wisdom can you share?
Check and recheck to make sure that you have all of your ingredients a few days ahead of time. I still haven't had luck finding the currants or saffron threads in my area. That would be my greatest advice – check for all your ingredients ahead of time!
Tell us about how you added a Wisconsin twist.
By adding the dried fruit I used dried Wisconsin blueberries and dried Door County cherries. I'm not sure where the raisins came from but they all worked out wonderfully.
