Wojapi Strudel. This homemade puff pastry strudel is filled with a berry sauce called Wojapi, a jam made of fresh fruit and sweetened with honey. I used strawberries and blueberries then baked until golden.

What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!

I used honey to sweeten my jam. I thought it would have been too tart but it was just right. . . not too tart and just sweet enough to not take away from the beautiful natural flavors of the berries.

How did you add a Wisconsin twist to your flavors or decoration?

I am paying tribute to the Native American tribes who played a huge part in the history of Wisconsin.
Wojapi is a traditional Native berry sauce made of fresh fruit and sweetened with honey or maple syrup. It is traditionally served with fry bread but I put a little spin on it and filled my strudel with this beautiful jam-like sauce. I also thought "how perfect" because my husband is part Native American.
