Would you describe yourself as a rogue baker, or do you strictly adhere to the recipe?
I went rogue this week. What a mistake. My savory bagels turned out fine, but what the heck happened to my currant ones??? Yeasty no-likey currant acidity? (same yeast was used for both batches) Not sure. Probably just operator error.
Tell us about how you added a Wisconsin twist to your bread creation.
I don’t want to talk about these bagels ever again. But, if I must: WI currants and herbs from garden. And yes, they are now on the compost pile. The crows probably won’t even eat them.
