Caramelized Onion Crackers (Potter's crackers clone). My wife, Jenni, loves Potter's crackers, but we don't make enough scratch to buy them frequently, so we decided to use this challenge to make them from scratch. It was a very easy recipe needing only flour, butter, pepper, sea salt (I used my favorite sea salt – Florida Sunshine from the Tea & Spice Exchange), and caramelized onions. It was made even easier as Jenni caramelized the onions for me while I was lounging in the hammock! They turned out very well and once I realized I needed to prick them with a fork (serious fail by the recipe), the second batch was even better.
Would you describe yourself as a rogue baker, or do you strictly adhere to the recipe?
After the gigantic Chelsea bunski incident of 2018, I am now a rogue baker.
Tell us about how you added a Wisconsin twist to your creation.
We enjoyed these Potter's cracker clones with our favorite WI chessemaker – Sartori's basil and olive oil parmesean cheese and a Fisher King pinot grigio.
How did you do?
It’s perfect – and I’m not sharing!
